Always read the footnotes.

Not here, necessarily.  Over at Roberta X's place.

Little while back, she posted this as a footnote to one post:

* Simplest recipe in the world: a cuppa flour, a cuppa milk, a coupl'a eggs.  Or three.  Pile high and serve with butter and sugar or good jam between each layer, or syrup.  Whatever.
 Hmm. Intriguing, especially from a woman who regularly posts breakfasts to be jealous of.

Day before yesterday, in the mood for a different sort of pancake, I went back to that footnote and decided what the hell.  Based off some Googling and a desire for something sweet, I added two tablespoons of melted butter and another two of sugar.

The result...'ono, as they would say in Hawaii.  Just wonderful.  I went with the three egg option because eggs.  Got about 9 pancakes from the batter, using 1/4 cup per.  Maybe they're supposed to be bigger, but that size made them easy to turn.  The girls liked them well enough that Bobbie made some more that day, and then Linda made some yesterday. So, simple enough for a 9-year-old.

By the way, if you love pancakes, Wikipedia's article on the subject is worth reading; it and Google will be your tummy's friend.  I have recipes for another type of Swedish pancake, skansk aggakaka bookmarked, and also ones for Scottish and Welsh. I haven't made any of these yet, though.

Cuppa Milk, cuppa flour, cuppa sugar.... isn't that the confection recipe from Steel Magnolias?
